On March 31, 2025, Chu marked César Chávez Day by highlighting her participation with the Latino & Latina Roundtable of the San Gabriel and Pomona Valley. "This weekend, I joined the Latino & Latina Roundtable of the San Gabriel and Pomona Valley to honor Chávez’s legacy and celebrate community leaders who advocate for immigrants and justice. Together, we carry on his fight for civil rights."
Later that day, she discussed legislative efforts marking the end of National Nutrition Month. She announced the introduction of the Nutrition CARE Act. "As National Nutrition Month comes to a close, I’m introducing the Nutrition Counseling Aiding Recovery for Eating Disorders (Nutrition CARE) Act with @RepBrianFitz, @RepPaulTonko & @RepDonBacon. This bill will expand access to life-saving eating disorder treatment for seniors."
